Broadbean, pea and rocket salad

July is broad bean seasonJuly, for me, is broadbean season – I just can’t get enough of them!

My favourite way to eat them is to steam a handful with a handful of fresh peas (they will only need 2 or 3 mins steam at most) and then serve on a bed of rocket leaves.

Crumble a decent sized slab of fresh feta cheese over the top and finish with a good slug of salad dressing. If I am feeling lazy I use Mary Berry’s salad dressing – it complements the sweetness of the beans, the saltiness of the cheese and the peppery heat from the leaves.

If you are lucky enough to be eating this on a warm July day try a few mint leaves to cool down your palate
