May is the start of the British asparagus season! If you haven’t done so before, this year try and get some ‘just picked’ asparagus from a farm shop or farmer’s market. Fresh asparagus is so sweet and delicious it needs hardly any cooking.
I just blanch it for 2-3 mins in boiling water and serve with a knob of creamy salted butter. Once you have tasted asparagus this fresh and unadulterated I promise you will never buy the air-freighted stuff again – by the time it gets to your plate much of the natural sugar has turned to starch and the texture has become woody rather than crunchy. So disappointing!
